Ingredients

  • 3 cups cooked rice
  • 200 grams boneless chicken breasts, cut into strips
  • 2 tablespoons oil
  • 1 tablespoon finely chopped garlic
  • 1-2 fresh red chillies, sliced
  • 1 egg
  • 1 medium carrot, finely chopped
  • 3-4 spring onion bulbs, sliced
  • 4-5 cherry tomatoes halved
  • 1 tablespoon sliced spring onion greens
  • A pinch sugar
  • Salt to taste
  • 1 tablespoon crushed stock cube
  • 5-6 pak choi
  • ½ teaspoon fish sauce
  • 1 teaspoon soy sauce
  • 1 teaspoon oyster sauce

Method

Heat oil in a non-stick pan. Add chicken, garlic and red chillies and sauté well. Add egg and mix well. Add carrot, spring onion bulbs, cherry tomatoes and spring onion greens and mix well. Add sugar, salt, stock cube and some water and mix well. Add torn pak choi and mix. Add rice, fish sauce, soy sauce and oyster sauce, mix well and cook for a minute. Adjust salt, if required. Garnish with spring onions and serve hot.
